1 lb. Rigatoni Pasta (cooked and drained)
1 med. onion, chopped
3 garlic cloves, minced
1 (14oz) can diced tomatoes
1 small green pepper
1 small red pepper
1 can or 1 c. of chicken

Directions:
Directions:
While pasta is cooking, saute onions, garlic, and peppers in a scant amount of olive oil. When they are tenderly cooked, but not overdone, add can of diced tomatoes and simmer for 10 minutes. Drain cooked pasta and toss with tomatoes, chicken and vegetables. You can now add sliced black California olives, sliced canned mushrooms, or anything else you might enjoy in it.
