1 large butternut squash
1 lb. sweet sausage (pork or chicken)
1 onion
Butter or olive oil
1 egg
Parsley (optional)

Directions:
Directions:
Microwave squash for 10 minutes and cut lengthwise ( leave in seeds). Bake at 350º for 30-45 minutes or until tender when pierced with a fork.

While squash is baking make the stuffing:
Brown onion in butter or oil for 5-7 minutes.Add sausage and brown until well cooked. Add cubed bread/ croutons. Fold egg into meat mixture. Add parsley. Scoop seeds out of cooked squash. Spoon 1/2 to 3/4 of cooked squash into meat mixture leaving some in skin. Return to oven for 25-30 minutes. ENJOY!!!

This is a recipe that we've been making since we lived in Rhode Island...and we've lived in San Diego since 1986! My daughters now make this for their own families. It's a favorite that always signals the onset of fall --- even without the beautiful New England foliage.
