1/2 chopped onion
2 to 3 cans low sodium beef broth
few chopped carrots
1/2 to 1 bunch chopped cilantro
Chopped Anaheim or Jalapeno pepper
1# ground turkey
1 to 11/2 cups cooked brown rice
1 to 2 cans low sodium chicken broth
Fresh spinach

Directions:
Directions:
Saute onion. Add low sodium beef broth. Add carrots, cilantro and peppers.
Make small meatballs from ground turkey and a little finely chopped green onion. Boil meatballs in broth.
Add 1 to 2 cans chicken broth and cooked wild rice. Add lots of fresh spinach at the end just before serving.
