1/4 cup green onions
1/4 cup freshly grated Romano Cheese
1 lb. rendered finely chopped bacon
1 cup croutons

Salad
2 heads Romaine
2 peeled tomatoes
1 large garlic clove

Dressing
3 oz. olive oil
Juice of 2 fresh lemons
1 tsp. ground pepper
1/4 tsp. chopped fresh mint
1/4 tsp. Oregano
1 coddled egg

Directions:
Directions:
Into a large bowl (wooden) pour 2 tsp. olive oil, sprinkle salt and rub firmly with a large clove of garlic. Remove garlic from the bottom of salad bowl. Place tomatoes, romaine sliced in 1 inch strips and condiments in salad bowl. Into a bowl pour oil, lemon juice and seasonings. Add coddled egg and whip vigorously. Combine dressing with salad, toss and serve immediately.

Direction to coddle egg
Bring egg to room temp. Place egg in mug and pour boiling water on top of egg. Make sure that the egg is completely immersed in boiling water. Keep egg in boiling water for 1 minute. Immediately run cold water over egg until it is easy to handle. Set aside to use in the salad dressing.
