3/4 lb. lean ground beef
1 small onion, chopped
1 1/2 c. shredded zucchini, drained
1 c. shredded cheese
1/2 c. eggbeaters
1/2 c. Bisquick
1 c. milk
salt and pepper, sprinkled

Directions:
Directions:
Preheat oven 400º. Spray skillet. Crumble meat, stir in onion and zucchini and cook over medium/high heat 6 minutes. Season with salt and pepper. Spray 9-inch pie plate. Spread beef mixture. Sprinkle with cheese. Whisk Bisquick, milk and eggs and pour over the beef. Bake 25 minutes. Cool and cut into 6 wedges. Serve with salad. Makes 6 servings.
