3 c. sweet corn
1/2 c. chopped onion
1 chopped red pepper
1 tbsp. vegetable oil
14 oz. chicken broth
1 medium cubed, peeled potato
4 tbsp. flour
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 c. milk
3 sliced crispy bacon, chopped

Directions:
Directions:
In a large saucepan cook onion and pepper in oil. Stir in broth, corn and potato. Bring to a boil - reduce heat to med/low. Simmer, covered, 10-15 minutes or until the potatoes are tender. In a small bowl combine flour, salt and pepper. Whisk in milk. Whisk this mixture into the simmering mixture slowly until thick. Stir in bacon.
