1 1/8 c. Dry Black Beans
3 c. H2O
1/2 c. Chopped Onion
2 Cloves Garlic, Minced
1 Bay Leaf
1/4 c. Snipped Parsley
1/2 tsp. Salt
1/2 tsp. Crushed Red Pepper
1 Medium Sweet potato, Halved Lengthwise and Sliced 1/4" Thick
1 (16oz) can Diced Tomatoes
1/2 tsp. Finely Shredded Orange Peel
5 c. Hot Cooked Rice

Rinse beans. In large saucepan combine beans and enough water to cover. Bring to a boil, reduce heat. Simmer 2 minutes. Remove from heat. Cover and let stand 1 hour.

Drain beans in colander. Rinse. Return to saucepan. Stir in onion, garlic, bay leaf, parsley, salt and pepper. Stir in 3 cups fresh water. Bring to boiling and reduce heat. Cover and simmer 1 1/4 hours, stirring occasionally (add more H2O if necessary).

Meanwhile cook sweet potato in boiling salted water 15-20 minutes. Drain. Remove bay leaf from beans. Add tomatoes to beans. Uncover and simmer 15-20 minutes or until a think gravy forms. Stir in orange peel. To serve spoon beans over hot rice. Serve with sweet potato.
