1 1/2 c. Strawberries, sliced
1 1/2 c. Rhubarb, chopped
2 tbsp. Honey
1 tbsp. plus 1 tsp. Corn starch
1/3 c. Water
Crust:
1 Egg
1/2 c. Butter, melted and cooled
1/4 c. Maple syrup
2 tbsp. Milk
1 1/2 c. Oats
1 c. ww Flour
1/3 c. Brown sugar
1/2 tsp. Baking soda
1/4 tsp. Salt

Directions:
Directions:
In pan bring sliced strawberries, rhubarb, honey, corn starch and water to a boil over med. heat. Immediately turn down to low heat and with a lid partially on allow mix to simmer for about 15 min., or until strawberries and rhubarb are tender, and sauce has thickened. Stir often to avoid burning and sticking.
In a small bowl lightly whisk egg in melted butter, with maple syrup and milk.
In another bowl combine oats, ww flour, brown sugar, baking soda, and salt.
Pour wet ingredients into dry and mix to combine.
Reserve 2/3 of the dough and press the rest into bottom of greased 9"x13" baking dish. Spread cooled filling over top of dough, then crumble the remaining dough over top. Dough should be a "wet" crumble, it does not have a dry texture to it. Bake at 350 for about 25 min. or until crust is firm and browned. Cool and cut into bars or squares.
