1 1/2 c. Brown sugar
2/3 c. Vegetable oil
1 tsp. Vanilla
1 Egg, beaten
1 c. Buttermilk or 1 c. Milk and 1 tbsp. Vinegar or Lemon juice
2 1/2 c. Flour
1/2 tsp. Salt
1 tsp. Baking soda
1/2 Walnuts, chopped
1 1/2 c. Rhubarb, chopped
Topping:
1 tbsp. Butter
1/3 c. Sugar

Directions:
Directions:
In a bowl mix brown sugar, oil, vanilla and egg until well combined. In another bowl mix flour, salt and baking soda. Add milk to sugar mix alternately with flour mix. Beat well after each addition. Fold in nuts and rhubarb. Turn into 2, greased 9"x5"x3" loaf pans. Mix topping and sprinkle on top. Bake at 350 for about 1 hour, or until toothpick comes out clean. Allow to cool on rack before slicing.
