Ingredients: 1 large chicken or 1 turkey breast or chicken pieces salt, celery leaves, (optional) bay leaf and onion 3/4 stick butter or margarine 1/2 cup flour (use a little less than 1/2 cup) 1 1/2 cups Half and Half 2 cups milk 3/4 cup parmesan cheese salt -to taste 1 large onion chopped 1/2 stick butter (or margarine) 1/2 pound mushrooms, cleaned and sliced 1/2 box thin spaghetti

Directions:Boil chicken or turkey in water in a big pot to which 1/2 tsp. salt, celery leaves, bay leaf and a little chopped onion are added. It usually takes about 15 or 20 minutes. Check chicken to see if it's done by cutting a piece open to see if it is all white inside. Strain the chicken into another pot and save the broth. Set it aside. Cut up, or tear up, chicken into little pieces and set aside.
Make cream sauce in a large size pot over medium low heat. Add butter, flour, Half and Half and milk. Salt if you want to. Add 2/3 cup parmesan cheese. Stir constantly. Heat it up, stirring for a few minutes, then take it off heat and set aside.
Boil spaghetti in the chicken stock that you saved. Add more water if needed. You can use the same pot that you boiled the chicken in. Spaghetti only takes about 10 minutes to cook. You can tell if it's done by tasting a piece and it should be chewy, not too soft. Drain when done. Set aside.
In a frying pan or skillet saute' (cook) chopped onion in 2 Tbsp. butter until soft. Take off heat and add to sauce. Saute' mushrooms in 2 Tbsp. butter for 5 minutes. Add to sauce. Add chicken pieces to sauce. Add cooked spaghetti to sauce. Taste and add salt if needed.
Place in a casserole baking dish. Sprinkle the rest of the Parmesan cheese on top. Bake at 350 until it bubbles, probably 15 minutes. |

Notes: Laurette may have omitted (left out) mushrooms if Ann or Ryan did not like them. She usually used margarine instead of butter, she did not use much salt. She may have left out onion if Ann or Ryan did not like them, but my guess is that she chopped them up small for taste and put some in.
Advice from Laurette: "If you're having a bad day, don't have a self pity party. Put on your best outfit, hair and make up and go out and do something."
