Directions:
Peel and chunk the potatoes in a large kettle. Fill kettle 3/4 full with water. Add a dash of salt. While waiting for the water to come to a boil, mix eggs and enough flour to make a soft but workable dough. Work with it until it is very thin. Drop dough into the boiling potato water. Repeat until all dough is used. Potatoes should be done boiling when you finish adding the dough. Strain potatoes and dumplings in colander. Place in a large hot skillet to which 1/4 cup of oil has been added. Fry on high turning frequently until golden brown. (You may need more oil). Saute onion in butter until golden and pour over the Glace.
