1 carrot chopped
1/2 onion chopped
1 tsp garlic minced
1/2 lb chorizo sliced
1 head kale cut into 1" pieces
1 qt chicken stock
3 tbsp sherry

Directions:
Directions:
Saute onions and carrots in a large pot or crock pot to release flavor. Add garlic & chorizo and saute for 5 minutes. Add Kale, and stock. Cover with water and cook over low heat (or on high if in crock pot) for 2-4 hours. Add sherry and serve with crusty bread.

I first made this recipe for Kris in 2001. Kris enjoys kale soup. Use turkey sausage for a healthy dish.
