2 - 2 1/2 Broiled Chickens, Halved
Lemon Sauce (Following)
1/4 c. Chopped Parsley

Lemon Sauce:
2 c. Fresh Lemon Juice
1 c. Olive Oil
1 tbls. Red Wine Vinegar
1 1/2 tsp. Minced Garlic
1/2 tsp. Dried Oregano
Salt & Pepper

Directions:
Directions:
To attain maximum heat, preheat broiler 15 minutes. Broil chicken halves turning once, about 30 minutes (until brown) and juices run clear. Meantime whisk juice, oil, vinegar, garlic, oregano, salt and pepper. Cover and refrigerate. Shake before using.

Remove chicken from broiler, leave broiler on. Using a very sharp knife, cut each half into 6 pieces (leg, thigh, wing, 3 small breast pieces).

Place chicken on a baking sheet with sides. Pour lemon sauce over chicken. Coat well. If necessary do in two batches. Return to broiler and broil for 3 minutes. Turn each piece and broil 1 minutes more. Remove chicken and place on a warm plates.

Pour sauce into heavy saucepan. Stir in parsley and place over high heat for 1 minute. Pour sauce equally over chicken. Serve with bread (Crusty) to soak up sauce.
