2 Small Chickens, Cut into 8 Pieces
1 c. Melted and Cooled Butter
1/4 c. Fresh Chopped Parsley
4 Scallions, Sliced Thin
1/4 c. Thinly Sliced Mushrooms
2 tbls. Chopped Chives
1 Clove Garlic, Minced
Salt & Pepper
4 c. Fresh Breadcrumbs

Directions:
In large dish, marinate chicken in butter, parsley, scallions, mushrooms, chives, garlic, salt and pepper for 1 hour at room temperature or several hours in fridge. If refrigerated allow chicken to return to room temperature. Heavily coat each piece of chicken with breadcrumbs and bake in 375º about 45 minutes.
