Crust:
4 c. flour
2 c. sugar
1 tsp. salt
3 sticks butter
Filling:
8 c. zucchini, peeled, seeded, sliced
2/3 c. lemon juice
1 1/2 tsp. cinnamon
1 c. sugar
Directions:
Directions:
Preheat oven 350 degrees. Mix lemon juice, sugar and cinnamon until smooth. Mix with the zucchini. Simmer until zucchini softens, but not mushy. Set aside to cool.
Blend crust ingredients well. Mix 1/2 c. of the crust mixture into the zucchini to thicken it. Pat half of the remaining crust mixture into 9 x 13 pan. Bake 8 minutes. Add the cooled filling. Sprinkle the remaining crust mixture on the top. Bake 35-40 minutes.
1/3 recipe = 8-9 in. pie.
