6 eggs separated
salt and pepper to taste
1/2 lb. longhorn cheese
1 tablespoon flour
8-10 roasted,peeled green chiles
Picante sauce (optional)

Directions:
Directions:
Beat egg whites until stiff. Mix flour,salt and pepper with egg yolks,then fold in egg whites and pour half of this mixture into a greased 9x13 inch dish. Slit each chile lengthwise and lay 4 -6 flat over the egg batter.Cover them with slices of cheese.Top with the rest of the chiles. Pour rest of egg batter over them. Bake for 25 minutes in a 325º oven.Cut is squares and serve with salsa.
