3/4 c. eggbeaters
1 3/4 c. white sugar
1 1/4 c. oil
1 1/4 tsp. vanilla
2 1/2 c. (22 oz.) french cut green beans, drained
3 3/4 c. whole wheat flour
1 1/4 tsp. salt
1 1/4 tsp. baking soda
1/2 tsp. baking powder
1 1/4 tsp. cinnamon
1/2 c. + 2 T. unsweetened cocoa powder

Preheat oven 350º. In large bowl, beat first 4 ingredients together thoroughly. Stir in green beans. In separate bowl, combine last 6 dry ingredients. Fold into egg mix and mix well, 1 minute by hand. Pour batter into sprayed 13 x 9 baking pan. Bake 30 minutes, until cake tester comes out clean. Cool 10 minutes. Makes about 24 servings. Top each piece with Cool Whip when serving. Good and moist. Cannot tell there are green beans in batter unless you make aware of surprise ingredient.
