1 3/4 cups oatmeal
3/4 cup unsweetened cocoa
1/2 teaspoon cream of tarter (or 1 1/2 Tablespoon vinegar)
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar substitute (like Splenda)
2 eggs
1/2 cup applesauce
1 teaspoon vanilla
1/2 cup plain Greek yogurt
1 cup hot water
1/2 cup dark chocolate chips

Directions:
Directions:
1. Preheat oven to 350 degrees. Line regular sized muffin tin with cupcake liners or spray with cooking spray.
2. In food processor, process oatmeal until it becomes a coarse powder.
3. Mix dry ingredients (oats to sugar substitute) together in large bowl.
4. In a separate bowl mix together wet ingredients, eggs to water.
5. Fold wet ingredients into dry ingredients just until moistened. Fold in chocolate chips.
6. Scoop batter into muffin tins. Will make 12 muffins.
7. Bake 12-15 minutes, until toothpick inserted in muffin comes out clean.
8. Cool muffins before removing from pan. Enjoy!

Note - Each muffin is about 115 calories. These muffins are a great way to satisfy a chocolate craving when you're on a low calorie diet. They taste even better if you pop a cooled muffin into the microwave for about 10-15 seconds to remelt the chocolate chips before eating.
