1 lemon
1/2 cup dry white wine
2 sprigs fresh parsley
2 sprigs fresh Thyme or 1/2 tsp. dried Thyme leaves
1 bay leaf
2 tsp. salt
1 T. balsamic vinegar
1 T. olive oil
1 tsp. Dijon mustard
1 clove garlic
Freshly ground pepper to taste

Cut lemon in half and squeeze juice in stock pot. Slice other half and place in stock pot. To cook artichokes, place 3 qts. of water in a large stock pot. Add onions, parsley, thyme, bay leaf, 2 tsp. salt. and boil. Cut tips off the artichoke leaves with scissors. If three qts. is not enough water to cover the artichokes add more water and simmer until tender. To check for doneness, pull off a leaf. In small bowl whisk vinegar, olive oil, mustard, garlic and 1 T. water. In a small bowl, at each persons setting, place the dipping sauce for the artichokes.
