1/2 cup of butter and shortening (Oil to saute)
2 onions, sliced
1 lb. chicken livers, washed and drained
2 hard boiled eggs
1 1/2 tsp. salt
1/8 tsp. freshly ground pepper

Directions:
Directions:
Place 1/4 cup mixture of oil and butter in skillet to saute onions. Stir onions frequently. Remove onions and set aside. Melt other half of oil and butter mixture in same skillet and saute livers for 10 minutes stirring occasionally.
Grind onions, egg yolks and liver in food chopper or chop very finely in wooden bowl. Do not use a blender or food processor. Add salt and pepper and mix well. (Chill) To bind mixture (in lieu of the fat in skillet) use sherry or sauterne wine to get a spreading consistency. Serve on a bed of lettuce leaves.
