2 lbs. lean eye of round
2 med. potatoes, peeled and quartered
2 large carrots, peeled and cut in 1-in. pieces
2 med. onions, cut into eighths
1/2 c. red wine
1 tsp. black pepper, freshly ground

Directions:
Directions:
Place beef in dutch oven or deep baking dish. Place potatoes, carrots and onions evenly around beef. Pour wine evenly over beef and vegetables. Sprinkle on black pepper. Cover and bake for 1 1/2 hours at 300º.

Can replace potatoes with turnips, parsnips and yams for a rich, earthy taste with your roast. Substitute skinless chicken breasts for beef. Use new potatoes and pearl onions. Substitute skinless turkey breasts for beef and brussel sprouts for potatoes.
