1 1/2 lbs. pork tenderloin (slice 1/2 inch thick)
1 T. flour
2 tsp. paprika
1 large chopped onion
4 - 6 sage leaves
4 oz. chicken stock (1/2 cup)
3 oz. dry white wine
1 can white beans
3 T. whipping cream

Directions:
Directions:
Place flour and paprika in plastic ziplock bag. Put pork slices in bag and shake. Make sure that the pork is covered with flour mixture. Put pork in a skillet with a lid and brown in olive oil. Pork will brown in 5-6 minutes. Make sure that the pork is browned on both sides. Remove pork from pan and add chopped onions. Add sage leaves, Vermouth or white wine, and chicken stock. Drain white beans and add to sauce. Return pork to skillet and simmer for 10 minutes. Add whipping cream to sauce and pour over pork medallions.
Serve with steamed broccoli and small roasted red potatoes
