4 bone-in pork chops (6-8 ozs. each)
1 cup red wine vinegar
1/2 cup flour
2 large eggs
1 1/2 cups Panko
Zest from 1/2 lemon
1 T. chopped fresh Thyme
1 T. chopped fresh Oregano
6 T. olive oil
Salt and pepper to taste

Pound each chop between 2 pieces of wax paper to 1/2 inch thickness. Arrange pork in a single layer in a large baking dish and cover with vinegar. Marinate at room temp for 1 hour. Prepare one dish with flour, one dish with eggs and one dish with Panko, lemon zest, Thyme and Oregano. Heat a large non-stick skillet over medium heat with 3 T. of oil. Season each chop with salt and pepper. Dredge each chop first with flour, then egg and then with Panko mixture. Make sure all sides of the chop are covered with mixtures. Fry the first 2 chops and then wipe out old oil and add the last 3 T. of oil. The chops should be crispy and cooked through. Cooking time should be about 4 minutes on each side.
