6 chicken wings
2-3 bone-in chicken breasts
3 qt. low sodium fat free chicken broth
6 carrots peeled
2 medium onions peeled
5 black peppercorns
1-2 cloves of garlic crushed
10 sprigs parsley
2 sprigs thyme
1 bay leaf
2 T. unsalted butter
3 leeks tops and root ends removed
1 tsp. salt
1 tsp. pepper
3 cups medium egg noodles
4 stalks celery

Make the stock: Place wings and chicken broth in a large stock pot over medium heat. Roughly chop 2 carrots, 2 celery ribs, and 1 onion. Add to broth along with peppercorns, garlic, 2 sprigs of parsley, thyme and bay leaf. Bring to a slow boil, simmer 1 hour. Strain broth discarding wings and vegetables. Allow broth to cool slightly and skim off fat. NOTE: While broth is simmering roast chicken breasts at 325 degrees for 50 minutes. Cool and remove meat. Set aside. NOTE: You can also use a rotisserie chicken.

Make soup: Slice remaining carrots, onion, celery, and leeks into 1/4 inch thick pieces. Chop remaining parsley. Saute vegetables in butter until onions are translucent. Add to broth along with 2 cups of water....simmer until vegetables are just tender. Add cut up chicken breasts and chopped parsley.
NOTE: Boil noodles separately. Drain, drizzle with a bit of canola oil and set aside.

To Serve: Add about a half cup of warm noodles to a soup bowl. Pour simmering broth with chicken and vegetables over noodles. Enjoy!

This is a combination of several different recipes for homemade chicken noodle soup. I love it because it has so much flavor and depth. Keeping the noodles separate prevents the soup from turning into mush overnight.
