4 tbsp butter
2 green onions, chopped
1/4 cup green pepper, chopped
3 Tbsp flour
1 1/2 cups rich milk
2 Tbsp pimento, chopped
1 can family size tuna or salmon, drained and flaked
salt and pepper to taste

Directions:
Directions:
Melt butter. Saute onion and green pepper. Add flour. Cook over low heat, gradually adding milk. Cook until thick. Add pimento and fish. Add seasoning. Fill crepes and fold.
