3 eggs, slightly beaten
2 c. sugar
1 c. oil
2 cups zucchini,grated
1 TSR. vanilla

3 cups sifted flour
1 TSR salt
1 TSR soda
2 TSR cinnamon
1/4 TSR nutmeg
1/2 TSR baking powder

1/2 c. chopped nuts

Directions:
Directions:
Combine and beat together eggs, sugar, oil, zucchini & vanilla.
Sift together flour, salt, soda, cinnamon, nutmeg, baking powder.
Add dry ingredients to egg mixture and stir well.
Add nuts if desired.
Pour into 2 well-greased loaf pans.
