1 1/2 cups bean sprouts
3/4 cups onions sliced thin
1/4 cup celery strips (2” long or canned veggies)
8 eggs
1 1/2 tsp salt
1/2 tsp pepper
1 1/2 cups meat (cooked and sliced into narrow strips)
You can use ham, shrimp or just about any leftover meat.

Brown Sauce

3 Cups of boiling water
4 beef bouillon cubes
Stir until well blended
1/4 cup corn starch
Chinese Fiji Sauce (if desired)
Rice

Drain sprouts real good, mix with meat & onions. Beat eggs with fork and add salt & pepper. Pour over other ingredients & mix lightly with fork. Pour about ¼ cup in frying pan that has 1/8” very hot fat. Brown well on both sides. Turn carefully (makes about 12 patties)

Brown Sauce - In another pan, brown 1/4 cup butter and add about ¼ cup cornstarch and blend well. Then pour bouillon mixture slowly and mix well. Cook until thick about 5 minutes. Add some Chinese Fiji sauce if desired. Serve patties over rice and pour brown sauce over rice.
