1 Lb Elbow Macaroni
1/4 Cup Unsalted Butter & 1/4 Cup Flour
2 Cups Milk
1 Cup Heavy Cream
1/2 Cup Chopped Green Onions
1 Tsp Salt
1 Tsp Black Pepper
1 Tsp Dry Mustard
1 Tsp Hot Sauce
1/2 Tsp Ground Nutmeg
1 1/2 Cups Shredded Sharp White Cheddar Cheese
1 1/2 Cups Shredded Sharp Yellow Cheese
1/4 Tsp Paprika
1/4 Cup Grated Parmesan Cheese

Preheat oven to 375º. Butter 13 x 9 x 2 baking dish or 2 1/2 quart casserole dish

Cook macaroni according to package directions; drain. Rinse under cold water drain and return to pasta pot.

In a saucepan, melt butter. Whisk in flour over medium heat for 2 minutes. Whisk in milk and cream; bring to a boil, whisking. Stir in scallions, salt, pepper, mustard, hot sauce and nutmeg; simmer for 2 minutes. Remove from heat and stir in 1 1/4 cups each of yellow and white cheeses until smooth. Pour over macaroni and toss. Transfer to prepared dish. Sprinkle top with remaining cheese and then sprinkle with paprika.

Bake 25 - 30 minutes until golden and the sprinkle with parmesan cheese. Let stand for 10 minutes before serving
