Can use Salmon or Sea Bass fillets
1/2 cup toasted and finely chopped pecans
2 T. flour
1 T. minced garlic
1/2 tsp. kosher salt
1/4 tsp. white pepper
2 T. olive oil
1 1/2 lbs. Salmon or Sea Bass fillets

Directions:
Directions:
Preheat oven to 400º. In a small bowl toss pecans, flour, garlic salt and pepper. Press fish fillets into pecan crust. Heat oil in an oven-safe saute pan over medium-high heat. Set fish fillet crust-side down in pan. Be careful not to get the pan too hot or you will burn the pecans. Let fish sear for 2-3 minutes, until pecans are golden brown. Turn over and place in oven to finish roasting. This will take about 4 or 5 minutes. Use a fish spatula to turn the fish. The spatula is approximately 2 inches by 8 inches.
