2 c. sugar
3 eggs
1 ½ c. vegetable oil
2 tsp. vanilla
16 oz. can crushed pineapple
2 c. finely grated carrots
3 c. flour
2 tsp. baking powder
1 tsp. cinnamon
¾ tsp. salt
2 tsp. baking soda
1 ½ c. chopped nuts
½ c. shredded coconut

Directions:
Directions:
Mix together sugar, eggs, oil, and vanilla. Blend pineapple in blender for 30 seconds to liquefy. Mix flour, baking powder, cinnamon, salt, and baking soda in a separate bowl. Add pineapple and carrots alternately with dry ingredients. Add coconut and nuts. Bake at 325º for 1 hr. Let cool and frost with cream cheese frosting (see the Grandma Lois Pumpkin Roll recipe for frosting recipe)
