Ingredients:  
1/2 cup onion, chopped fine
1/2 cup green pepper, chopped fine
1/2 cup celery, diced fine
2/3 cup butter or margarine
2 quarts corn bread crumbs (be sure the corn bread is well browned)
6 hard- cooked eggs, chopped
1/2 cup chopped pimento
salt and pepper
chicken or turkey stock

Directions:
Directions:
Saute the onions, green peppers and celery in the butter. Add corn bread, hard cooked eggs, and pimento. Season with salt and pepper. Moisten with chicken or turkey stock. Turn into a shallow well-buttered casserole and bake at 350º until brown on the top.
