1/4 cup minced onions
4 T. butter
1/2 cup flour
2 cups milk
2 cups chicken broth
1/2 lb. fresh mushrooms, sliced
1/2 cup diced celery
1/2 lb. bay shrimp
2 lbs. sharp processed cheese

Directions:
Directions:
Saute celery, mushrooms, and onions in 4 T. butter until tender. Blend in flour until smooth. Add other ingredients except cheese and shrimp until mixture is thickened. Reduce heat, add cheese and shrimp. Simmer for 15 minutes. Add 2 oz. of sherry just before serving.

There are two versions of this soup. This one is Rog's soup ( created by Roger Conrad) and the other is Cheese Shrimp Soup (created by Roger's mom, Laura Kruse Conrad). Ingredients is about the same except for the amount of cheese, mushrooms and celery that is used.
