"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Combine graham cracker crumbs, sugar and butter and press into bottom of springform pan.

Beat cream cheese, eggs, sugar and vanilla. Pour filling over crust. Bake at 370º (this is correct) for 30 minutes. Turn oven off (open oven door) and leave cheesecake in the oven for 45 minutes to an hour (this keeps it from falling). Top with fruit filling or caramel pecan topping.

Topping:
17 small Kraft caramels
1/4 c. milk
chopped pecans

Unwrap caramels. Place milk and caramels in microwave. Heat on high for 2 - 2 1/2 minutes. Stir until melted; add pecans. Drizzle over cheesecake.
