1 medium onion, diced (may substitute 2-3 leeks)
1/2 package ground sausage
7-8 medium potatoes, peeled and cubed
1 box chicken broth, low sodium
1 c. heavy cream (may substitute milk)
salt and pepper to taste.

Directions:
In large pot brown sausage, remove and set aside. In sausage drippings saute onion until tender (may add a little butter or olive oil if necessary). Once onions are tender add potatoes to pot. Add box of chicken broth to pot- if it doesn't cover potatoes, add more broth or water until they are covered. Add sausage back to pot. Cook on medium heat until potatoes are fork tender. In blender, blend 1/4 to 1/3 of potatoes with some broth until smooth and then add back to pot. Add heavy cream and salt and pepper to taste.

My hubby and kiddos hate onion, so I blend the onion in the blender prior to cooking it so I still get the added flavor without the chunks.
Also you may leave the sausage out of this recipe if you desire- it is just a favorite in my home.
We enjoy serving the soup with shredded cheese, croutons, bacon, green onions and browned andoullie sausage- that way everyone can add what they like to their bowl.
