3 boneless/skinless chicken breasts (about 1-1/2 or 2 lbs) cut into bite-size cubes
2 T olive oil
3/4 tsp salt
1/4 tsp pepper
1 lg onion, chopped
4 cloves garlic, finely chopped
2 T grated fresh ginger
2 tsp ground cumin
1/4 tsp cayenne
1-1/2 lbs sweet potatoes (peeled and cut into 1/2 inch pieces)
14-oz can crushed tomatoes
1/2 cup creamy peanut butter
4 cups water
cilantro, if desired
chopped roasted peanuts, if desired

Directions:
Directions:
Heat olive oil in a large saucepan over medium heat. Add chicken, salt and pepper. Cook, covered, stirring occasionally, until chicken is almost completely cooked. Stir in onion, garlic and ginger and cook for 1 minute. Stir in cumin and cayenne and cook 1 minute more. Add sweet potatoes and crushed tomatoes, peanut butter and water. Bring to a boil. Reduce heat and simmer, covered, until the sweet potatoes are tender. (about 18-20 minutes). Serve with cilantro and chopped peanuts, if desired.
