1/2 cup of white vinegar
1 tsp minced (very finely chopped) green chill (or jalapeņo etc.)
1/4 tsp salt
1 cup thinly sliced onion
4 large ripe tomatoes, cut into wedges

Directions:
Directions:
In a medium bowl, combine vinegar, green chili and salt. Toss with the onion and set aside for 5 minutes to mellow the onion (the vinegar removes the "raw" taste).
Add tomato and combine thoroughly. Let sit about 15 minutes before serving.
