Grocery stores typically sell way more cilantro in a bunch than most people require. Here are 2 options for preserving fresh cilantro:

1. Place the cilantro in a freezer bag, pushing out as much air from the bag as possible. Place it in the freezer. Remove leaves as needed. This does not work for recipes where cilantro is called for as a garnish.

2. Whirl the cilantro in a blender with enough water to make a thick puree. Freeze this in small covered containers or in a clean ice cube tray. Once frozen through, transfer the cilantro cubes to a sealable plastic bag for long-term storage. Drop a cilantro cube directly into soups or stews.

This is a great option for those of us who use cilantro now and then but not enough to warrant having it in the fridge at all times.
