1 lb. ground meat
2 c. sliced sweet mini peppers
4 gloves of garlic minced or grated
1 bunch of green onions sliced, separating the green parts with the white parts
1/2 can of sliced water chestnuts sliced further into thirds
2 T. olive oil
Ground Ginger
Salt
Pepper
8 oz. of Mr Yoshidas marinade and cooking sauce
Iceberg or Romaine lettuce
Sriracha Hot Chili Sauce

Brown ground meat in a large pan seasoned with salt and pepper to taste. In a separate pan saute white part of green onion and sliced sweet mini peppers in olive oil over medium heat for a couple of minutes. Add in sliced water chestnuts and minced or grated garlic. Add vegetables to meat. Pour Asian cooking sauce over the meat and vegetables. Add ginger (I like a lot but add to taste), stir and let simmer. Just prior to serving add the green parts of the sliced green onions. Stir and cook for about a minute.

Cut Iceberg lettuce in half and remove leaves to keep like cups or use whole leaves of romaine. Spoon meat and vegetables into the lettuce or romaine. If you like a kick add a little bit of Srirachi Hot Chili Sauce. Roll lettuce with meat and enjoy.

This has been a favorite meal of my kids for years. They do not realize the vegetables they are eating. For the ground meat I use the ground turkey from Costco which is about 1.25 lbs per tray. I buy the Mr Yoshidas Sauce at Costco. You can use your favorite Asian style cooking sauce, but not just soy sauce. You can use soy sauce with brown sugar, ginger and garlic to make your own sauce. For the water chestnuts I slice the whole can and freeze the other half for my next batch. I buy the big bag of sweet mini peppers from Costco to and slice the whole bag and freeze what I don't use for my next recipe.
