4 eggs
3/4 c. table cream
2 tsp. butter
2 tbsp. onions
1/2 c. Swiss cheese, grated
1 tsp. basil
1/4 tsp. cayenne pepper
Pinch nutmeg
12 oz. shucked standard oysters, drained
1 (8 or 9 inch) pre-baked pie crust

Directions:
Directions:
Preheat oven to 375ºF.
Heat oysters until edges turn in butter and onion then remove from heat. In a medium bowl beat (with French whip) eggs, cream, basil and cayenne pepper. Fold in nutmeg and cheese. Pour oyster mixture into pie shell and pour egg mixture over top. Bake at 375ºF for 30-35 minutes. Serves 4-6.
