Beef Mixture:
1 lb. lean ground beef
1/2 onion or 1 small onion, diced
3/4 tsp. salt
1/2 tsp. pepper
1/2 c. corn
3/4 c. green Trader Joe's green salsa
1/2 can pinto beans, rinsed and drained
1/2 c. shredded Mexican cheese

Cornbread Topping:
1/4 c. cornmeal
3/4 c. flour
1 1/2 tbsp. sugar
1/2 tbsp. baking powder
1/4 tsp. salt
2 1/2 tbsp. oil
1 egg, beaten
1/2 c. + 2 tbsp. milk

Directions:
Preheat oven to 375º. Lightly grease a 9x9 pan and set aside. In a large skillet, brown meat and onion, adding in salt and pepper until meat is no longer pink. Drain grease and then add in corn, salsa and beans. Pour the mixture into the 9x9 pan and set aside.
Cornbread: Combine cornmeal, flour, sugar, baking powder and salt in a medium bowl. Make a well in the center and add the oil, egg and milk. Whisk together until just wet.
Sprinkle cheese over the beef mixture and then pour the batter over the beef mixture. Gently spread the batter over the beef and cheese to the edges of the pan.
Bake for 35-40 minutes until edges are bubbly and a toothpick comes out clean or with only a few crumbs. Let stand for about 10 minutes before serving.
