Salad Base
2 C. cooked wild and brown rice mixture
½ C. black beans – rinsed and drained
½ C. currants
1 red pepper finely chopped
2 green onions finely chopped
½ C. pine nuts or pecans, toasted for about 10 mins at 300 deg.

Dressing
2-3 Tbsp. sesame oil
2-3 Tbsp. soy sauce
2-3 Tbsp. brown sugar or maple syrup
1 tsp. of fresh ginger or more to taste
1 clove garlic crushed
½ lemon squeezed

Combine all and dressing, chill about 2 hours.

I usually double this recipe and use one whole tin of black beans. Slight preference for pecans too. I add lib with things like corn, more peppers esp. with different colours.
