1 T. olive oil
3 stalks of celery, sliced at a slant
4 oz. shiitake mushrooms, sliced
1 T. curry powder
4 cups chicken broth
1 can coconut milk
1 T. + fish sauce
1 red bell pepper, thinly sliced or chopped
1 lb. Asian style frozen dumpling or pot stickers
Juice of one lime
Sliced green onions and cilantro for garnishing

Directions:
Directions:
Heat oil, add celery, mushrooms and curry powder in pot. Add chicken broth, coconut milk, 1 T. fish sauce and 1 cup water and simmer. Add bell pepper to pot and simmer until vegetables are crisp-tender. Add dumplings and cook until tender. Stir in lime juice. Season the soup with salt and add more fish sauce to taste. Top with sliced green onions and cilantro.
