1 lb. black beans
2 1/2 qts. of water
2 stalks of celery with leaves, chopped in big chunks
1 onion stuck with 2 whole cloves
1 chopped carrot
2 cloves garlic, minced
1 small dry chili
1 bay leaf
1 cup dry white wine
1 tsp. thyme
1/2 tsp. freshly ground pepper
2 T. chopped cilantro

Wash beans and cover with cold water to sit overnight. Drain and place in appropriate size pot. Add 2 1/2 qts. water, covering the beans by at least 1 inch. Tie carrots, celery, bay leaf and chili in cheesecloth bouquet and bring to a boil. Simmer for an hour. Drain beans and reserve liquid. Remove cheesecloth pack. Place beans back in pot and add 1 cup water and 1 cup wine. Add the thyme, garlic and pepper. Chop carrots from the cheesecloth bouquet and place in soup pot, Add more bean liquid when the mixture starts to get dry. Simmer the above mixture for a hour. Just before serving, add cilantro on top of black beans and a lime wedge on the side.
