2 large onions, finely chopped
2 T. salad oil
1 cup chopped red, yellow or orange bell peppers
2 large cloves garlic, pressed
2 Ibs. ground turkey
1 can (16 1/2 oz.) whole tomatoes
2 cans kidney beans, drained
2 large cans of tomato sauce or diced tomatoes
1/4 cup soy sauce
3 T. chili powder
1 tsp. each of ground cumin, dry sage, and dry thyme
2 limes cut into wedges

Heat oil in a 6-8 qt. pan. Add bell peppers. garlic, and onions. Stir often until onions get soft. Crumble the turkey into the pan and cook. Add tomatoes and tomato sauce or diced tomatoes. Break up the tomatoes with a spoon. Add the rest of the ingredients and simmer for 1-2 hours. When serving garnish with chopped purple onions and squeeze lime wedges over chili.
