3 eggs
1 c. vegetable oil
1 3/4 c. sugar
2 c. shredded carrots
1/2 fresh medium lemon
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder

Directions:
Directions:
Preheat oven 350º. Grind lemon peel and pulp with chopper or blender. Beat eggs. Add oil and sugar. Mix well, add carrots and lemon and blend. Sift dry ingredients. Add to liquid ingredients to blend. Pour in greased loaf pan. Bake 1 hour. Good!
