2 tbsp. flour

1 c. sugar

2 tbsp. butter

2 eggs

1 c. milk

juice and grated rind of 1 lemon

Directions:
Directions:
Mix flour and sugar in mixer. Add butter and beat until incorporated. Separate the eggs. Beat yolks and milk together. Add to butter mixture and beat until smooth. Add lemon juice and rind.
Beat egg whites until stiff and fold into batter. Pour batter into a 8 inch square greased baking dish. Set dish in a pan of hot water. Bake 35-40 minutes at 350. When finished cooking, brown the pudding under the broiler.
