1 Large Stalk Celery, Chopped
1 Small Onion
2 Medium Carrots, Chopped
1 1/2 lbs. Top Round Steak, Butterflied and Pounded
1 (16 oz) pkg. Prepared Stuffing Mix
Dijon or other good Mustard
1 c. canned Beef Stock

Directions:
Directions:
Place celery, onion and carrots in large measuring cup. COver and microwave on high 3-5 minutes. Mix the stuffing according to directions and add to veggies. Spread mustard over surface of the meat and spread stuffing over mustard. Roll up meat and secure with toothpicks. Place in glass loaf pan and pour beef stock over meat. Cover with plastic wrap and microwave on medium for 20-25 minute until meat is tender.

Remove meat and pat dry with paper towel. Heat a skillet until very hot and sear meat on all sides. Set meat aside and deglaze skillet with reserved juices. Reduced by half. Slice meat into 1" rounds. Serve w/ Sauce.
