4 Cooked Artichokes
1 tsp. Vegetable Oil
1 Clove Minced Garlic
1 1/2 c. Corn
2 Tbsp. Sunflower Seeds
2 Tbsp. Soy Sauce
4 Scallions (chopped)
1 c. Fresh Bean Sprouts
1 med. Tomato
Melted Butter

Directions:
Directions:
In medium non-stick skillet, heat the oil. Add garlic, corn, tomato, seeds & soy sauce. Cook 3 mins add sprouts & scallions. Saute 1 min.

Carefully spread leaves, remove purple leaves & fuzz. With spoon, scoop out artichoke. Fill center w/ vegetable mixture. Serve w/ melted butter.
