1 lemon
2 T. butter, melted
2 T. flour
1 c. 2% milk
1 garlic clove, pressed
1/2 c. prepared basil pesto
6 boneless, skinless chicken breasts
1 T. lemon pepper
12 oz uncooked linguine pasta
2 plum tomatoes
1/2 c. thinly sliced fresh basil leaves

Zest a lemon to measure 2 tsp. In a small bowl, combine better and flour. Whisk until smooth. Add lemon zest, milk and pressed garlic. Microwave, on high 3-4 minutes or until thickened. Stirring every 30 seconds. Add pesto, mix well. Cut chicken into strips and season with lemon pepper. Cook until chicken is done. Meanwhile, cook pasta according to package directions, drain. Dice tomatoes and remove seeds. Combine chicken, pesto mixture, and pasta. Top with tomatoes and basil. Serve.
