2 c. cake flour
1 ½ tsp. baking powder
1/8 tsp. salt
2/3 c. shortening
1 ¼ c. sugar
1 tsp. vanilla
¼ tsp. almond flavoring
3 eggs separated
½ c. milk
¾ c. raspberry jam
Confectioners sugar

Sift flour, measure; add baking powder & salt, sift again. Cream shortening with sugar until light and fluffy. Add vanilla and almond flavoring; mix well. Beat egg yolks until thick and add to sugar mixture; mix well. Gradually add sifted ingredients and milk alternately; beat well after each addition. Beat egg whites until stiff and fold into batter. Turn into 2 greased 9 inch layer pans. Bake in 350°F about 25 minutes. Cool thoroughly. Spread jam between layers. Sprinkle confectioners’ sugar over top.
